Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh herbs (parsley, basil, or oregano) for garnish

Instructions

  1. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2 days, keeping the dressing separate until ready to eat.
