1 lb (450 g) ground chicken
½ tsp salt
½ tsp black pepper
1 egg
1/3 cup breadcrumbs (optional, for binding)

Instructions
In a large bowl, combine the ground chicken, crumbled feta, parsley, mint (if using), minced garlic, dried oregano, salt, black pepper, egg, and breadcrumbs. Mix gently until just combined—be careful not to overwork the mixture!
Shape the mixture into 4-6 evenly sized patties. This step is crucial; avoiding overworking the meat keeps the burgers tender and delicious.
Heat a drizzle of olive oil in a skillet over medium heat or preheat your grill if you prefer outdoor cooking. Cook the patties for about 5-6 minutes per side, until they turn a beautiful golden brown and reach an internal temperature of 165°F (74°C).
