  • 2 boneless, skinless chicken breasts
  • 1 cup quinoa
  • 2 cups water or chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, chopped
  • 1/4 cup olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, and pepper. Grill for about 6-7 minutes on each side, or until fully cooked. Allow the chicken to rest before slicing.
  2. Rinse quinoa under cold water. Add to a pot with water or broth, bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes until fluffy. Let it cool.
  3. In a large bowl, combine quinoa, cherry tomatoes, cucumber, red onion, olives, and feta. Toss gently.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Divide quinoa salad into meal prep containers, top with grilled chicken, and garnish with parsley. Store in the refrigerator for up to 4 days.

Notes

For added flavor, marinate chicken in olive oil and lemon juice before grilling. Rinse quinoa thoroughly to remove bitterness.
