A delicious and vibrant breakfast sandwich with creamy avocado, fluffy egg, and fresh Mediterranean ingredients.

Ingredients

  • 2 slices of bread
  • 1 egg
  • 1 tablespoon plain yogurt
  • A sprinkle of rosemary (fresh or dried)
  • A handful of fresh spinach leaves
  • A few tablespoons shredded mozzarella cheese
  • ½ avocado
  • A squeeze of lemon juice
  • Sundried tomatoes
  • Sliced cucumber
  • Feta cheese
  • Pesto

Instructions

  1. Toast both slices of bread to your liking and set aside.
  2. In a small bowl, whisk the egg and yogurt until smooth.
  3. Pour the whisked egg mixture into a greased pan over medium heat, shaping it to match the size of your bread.
  4. When the egg is still a touch wet, lay fresh spinach leaves on top.
  5. Carefully flip the egg to cook the other side.
  6. Sprinkle the cooked egg with shredded mozzarella and a dash of rosemary; season with salt and pepper to taste.
  7. Mash the avocado with a squeeze of lemon juice, salt, and pepper.
  8. Spread the avocado mixture over one slice of toasted bread.
  9. Layer sundried tomatoes, cucumber slices, crumbled feta, and pesto on top of the avocado.
  10. Place the cooked egg on top of the layered ingredients.
  11. Top with the second slice of toasted bread and slice in half before serving.

Notes

For added flavor, consider adding olives or pickled red onions. Serve with fresh fruit or a light salad.
