A creamy and flavorful chicken dish that combines juicy chicken breasts with a luscious sauce featuring sun-dried tomatoes, perfect for intimate dinners or special occasions.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat a large skillet over medium-high heat.
  2. Add olive oil and heat until shimmering, then season the chicken on both sides.
  3. Cook the seasoned chicken for 6-7 minutes on each side until golden brown.
  4. Remove chicken from skillet and set aside to rest.
  5. Add heavy cream, chicken broth, Dijon mustard, and lemon juice to the skillet and bring to a gentle simmer.
  6. Let the sauce simmer for about 3-5 minutes until it thickens slightly.
  7. Stir in chopped sun-dried tomatoes and Parmesan cheese.
  8. Return the chicken to the skillet and spoon sauce over it.
  9. Simmer for an additional 2-3 minutes to heat through.
  10. Garnish with fresh parsley before serving.

Notes

Pair with rice, mashed potatoes, or a garden salad. Store leftovers in an airtight container for up to 3 days.
