  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped

Instructions

  1. Prepare the meatball mixture by combining ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, Italian seasoning, salt, and pepper in a large bowl. Form into 1-inch meatballs.
  2. Sauté the meatballs in olive oil over medium heat until browned and cooked through, about 8-10 minutes. Remove from skillet.
  3. Cook orzo in boiling water according to package instructions, typically about 8-10 minutes. Drain and set aside.
  4. Make the creamy sauce in the same skillet by adding chicken broth, heavy cream, spinach, and sun-dried tomatoes. Simmer for about 5 minutes.
  5. Combine the orzo and meatballs with the sauce, stirring gently to coat. Serve warm.
