Warm and comforting banana bread topped with a sweet maple glaze, perfect for breakfast or an afternoon treat.

Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup maple syrup
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 4×8-inch loaf pan.
  2. In a mixing bowl, combine melted butter with mashed bananas.
  3. Sprinkle in baking soda and a pinch of salt, stirring to combine.
  4. Add sugar, beaten egg, and vanilla extract; mix well.
  5. Gradually stir in the flour until just combined.
  6. If using, gently fold in chopped walnuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-65 minutes, or until a toothpick comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
  10. For the glaze, mix maple syrup with powdered sugar and drizzle over the cooled loaf.

Notes

Store leftovers in an airtight container for up to 3 days at room temperature or refrigerate for up to a week. Freeze slices for up to 3 months.
