  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 2 sweet potatoes, cubed
  • 2 cups seasonal vegetables (e.g., bell peppers, zucchini, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together maple syrup and Dijon mustard.
  3. Place chicken breasts in a shallow dish and pour the marinade over them, ensuring they are well-coated. Let marinate for at least 30 minutes.
  4. On a baking sheet, toss cubed sweet potatoes and seasonal vegetables with olive oil, salt, and pepper.
  5. Push vegetables to the sides of the baking sheet and place the marinated chicken in the center.
  6. Roast in the oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.
