A simple and healthy air fryer recipe for crispy eggplant that’s perfect as a side dish, snack, or salad topping.

Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning (optional)

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. Cut the eggplant into slices or cubes.
  3. Toss the eggplant with olive oil, garlic powder, onion powder, salt, pepper, and Italian seasoning.
  4. Place the seasoned eggplant in the air fryer basket in a single layer.
  5. Cook for 10-15 minutes, shaking the basket halfway through.
  6. Remove from the air fryer and serve warm.

Notes
