A comforting dish featuring juicy chicken, hearty potatoes, and gooey cheese, perfect for family dinners and casual get-togethers.

Ingredients

  • 2 pounds of chicken (breasts or thighs)
  • 4 large potatoes (russet or Yukon gold)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked bacon pieces
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: chives or green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the potatoes into bite-sized pieces.
  3. Toss the potatoes with olive oil, salt, and pepper until evenly coated.
  4. Spread the potatoes on a baking sheet and roast for about 20-25 minutes.
  5. Season the chicken with salt and pepper while the potatoes are roasting.
  6. Cook the chicken in a skillet over medium heat for about 7-10 minutes per side.
  7. Add the chicken to the baking sheet with the potatoes, then top with bacon pieces and shredded cheese.
  8. Return to the oven for an additional 5-10 minutes until the cheese is melted.
  9. Garnish with chives or green onions if desired and serve warm.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the microwave or oven.
