  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 oz) enchilada sauce
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups cooked rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1012 tortillas
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Brown the ground beef over medium heat, breaking it into small pieces.
  3. Add the chopped onion and minced garlic to the skillet, cooking until softened.
  4. Stir in the enchilada sauce, black beans, corn, cooked rice, cumin, chili powder, salt, and pepper.
  5. Layer tortillas, followed by the beef mixture, then sprinkle cheese. Repeat layers, ending with cheese.
  6. Bake for 25-30 minutes until the cheese is bubbly and golden.
  7. Garnish with fresh cilantro before serving.

Notes

You can customize the toppings and add a dollop of sour cream for extra flavor.
