A warm and comforting vegetable soup with creamy tahini and a zesty lemon flavor, perfect for chilly evenings.

Ingredients

  • 1 cup tahini
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (carrots, zucchini, spinach)
  • 1 lemon (juiced)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Olive oil (for drizzling)
  • Fresh herbs (optional for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the minced garlic for 1-2 minutes until fragrant.
  3. Pour in the vegetable broth and bring to a simmer.
  4. Add the mixed vegetables and cook for about 10-15 minutes until tender.
  5. Stir in the tahini and lemon juice, mixing well to combine.
  6. Season with salt and pepper to taste.
  7. Remove from heat and serve hot, garnished with fresh herbs if desired.

Notes

For added flavor, roast the vegetables before adding them to the pot.
