Warm, chewy cookies with a refreshing burst of lemon flavor, perfect for any occasion.

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, fresh lemon juice, and lemon zest until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Coat each ball in granulated sugar.
  7. Place the dough balls on your prepared baking sheets, spacing them a couple of inches apart. Bake for 9–11 minutes until they turn lightly golden.
  8. Once baked, allow the cookies to cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For added flavor, consider increasing lemon zest or juice. Store in an airtight container for up to one week.
