Ingredients

  • 2 cups mixed vegetables (bell peppers, zucchini, carrots, etc.)
  • 2 tablespoons olive oil
  • 1 lemon (juiced and zested)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh herbs for garnish (like parsley or basil)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine mixed vegetables with olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper in a large bowl.
  3. Toss until the vegetables are well coated.
