  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk together the almond milk, maple syrup, lemon zest, lemon juice, and vanilla extract until well combined.
  2. Stir in the chia seeds, mixing thoroughly to avoid clumps.
  3. Cover the bowl and refrigerate for at least 240 minutes or overnight until the mixture thickens to a pudding-like consistency.
  4. Before serving, stir the pudding again.
  5. Portion into bowls or jars and enjoy, garnished with fresh fruit or nuts if desired.

Notes

Make sure to whisk well after adding the chia seeds to avoid clumping. For a creamier texture, blend the mixture before refrigerating.
