A comforting dish of crispy chicken in a bright, zesty lemon sauce that captures the essence of French cooking.

Ingredients

  • 2 large chicken breasts, halved lengthwise
  • Salt & pepper, to taste
  • 1/2 teaspoon garlic powder
  • 1/4 cup + 1 tablespoon flour, divided use
  • 2 eggs, lightly beaten
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 cup chicken broth or a mix of chicken broth and dry white wine
  • 1 tablespoon lemon juice
  • 1/2 lemon, sliced into thin rings
  • Optional for serving: chopped parsley, freshly grated parmesan cheese

Instructions

  1. Pound the chicken between plastic wrap to about 1/4-inch thickness for even cooking.
  2. Season the chicken with salt, pepper, and garlic powder.
  3. Dredge each piece of chicken in flour for an even coating.
  4. Dip the chicken in the beaten eggs.
  5. Fry the chicken in heated olive oil for about 3 minutes on each side until golden.
  6. Create the sauce by melting butter and mixing in flour to form a roux.
  7. Whisk in chicken broth and lemon juice, scraping browned bits from the skillet.
  8. Add lemon slices and simmer for 5 minutes until thickened.
  9. Coat the chicken in the sauce.
  10. Plate the chicken and garnish with parsley and parmesan if desired.

Notes

Serve with rice or mashed potatoes and a light salad. Leftovers can be stored for up to 3 days.
