Fluffy lemon blueberry biscuits that are buttery and easy to make, perfect for any occasion.

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1/2 cup cold buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 cup fresh blueberries
  • Zest of 1 lemon
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Whisk together the flour, baking powder, salt, and sugar in a large bowl.
  3. Combine the buttermilk, melted butter, lemon zest, and lemon juice in another bowl.
  4. Mix the wet ingredients with the dry ingredients until just combined, then gently fold in the blueberries.
  5. Pour some melted butter into a baking pan to coat the bottom.
  6. Spoon the biscuit dough into the pan, leaving some space for expansion.
  7. Drizzle the remaining melted butter over the top of the biscuits.
  8. Bake for about 15-20 minutes, or until golden brown.
  9. Let cool slightly before serving.
