A delightful low-carb twist on a classic holiday treat, featuring crunchy saltine crackers coated in a caramel-like sweetener and topped with sugar-free chocolate and nuts.

Ingredients

  • 1 package of keto-friendly saltine crackers
  • 1 cup unsalted butter
  • 1 cup granulated erythritol or preferred keto sweetener
  • 1 cup sugar-free chocolate chips
  • ½ cup chopped nuts (walnuts, pecans, or almonds)
  • Sea salt, for sprinkling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper.
  3. Arrange the saltine crackers in a single layer on the lined baking sheet.
  4. Melt the butter in a medium saucepan over medium heat.
  5. Add the erythritol and stir until it comes to a boil.
  6. Boil the mixture for 3 minutes without stirring.
  7. Pour the hot mixture evenly over the saltine crackers.
  8. Bake for 5-7 minutes until bubbly and lightly browned.
  9. Remove from oven and sprinkle chocolate chips over the hot toffee.
  10. Spread the melted chocolate evenly across the toffee.
  11. Sprinkle the chopped nuts and a light sprinkle of sea salt on top.
  12. Cool completely at room temperature or refrigerate for 30 minutes.
  13. Once set, break into pieces and enjoy!

Notes

Store in an airtight container at room temperature for up to a week. Customize with spices or vary the nut options as desired.
