  • 2 boneless, skinless chicken breasts
  • 1 cup almond flour
  • 1 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1 cup marinara sauce (sugar-free)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix together almond flour, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper in a bowl.
  3. Coat the chicken breasts thoroughly in the almond flour mixture.
  4. Heat olive oil in a skillet over medium heat and cook the chicken for 3-4 minutes on each side until golden brown.
  5. Transfer the chicken to a baking dish and top with marinara sauce and shredded mozzarella cheese.
  6. Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
  7. Allow the dish to rest for a few minutes before serving.
