Savor the warmth and nostalgia of these Juicy Cheesy Ground Beef Quesadillas, made with perfectly seasoned ground beef and gooey cheese, all encased in a golden tortilla.

  • 2 cups shredded cheese (cheddar or a blend)
  • 1 pound ground beef
  • 1 tablespoon taco seasoning
  • 4 large flour tortillas
  • 1 cup diced bell peppers (optional)
  • 1/2 cup chopped onions (optional)
  • Cooking oil for frying
  • Sour cream and salsa for serving

Instructions

  1. Brown the ground beef in a skillet over medium heat, and drain excess fat.
  2. Add taco seasoning and mix well, cooking for another 2-3 minutes until combined.
  3. Heat a separate skillet over medium heat and add a little cooking oil.
  4. Place one tortilla in the skillet, sprinkle half of the cheese on one half, add a portion of the ground beef mixture, and top with more cheese. Fold the other half over.
  5. Cook until golden brown on one side, then flip and cook the other side until the cheese melts.
  6. Repeat with remaining tortillas until all quesadillas are cooked.
  7. Serve warm with sour cream and salsa.

Notes

Leftover quesadillas can be stored in an airtight container in the fridge for up to 3 days. Reheat on a skillet to retain crispiness.
