Ingredients

  • 8 oz rice noodles
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/4 cup soy sauce
  • 2 tbsp basil, chopped
  • 1 tsp Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • Parmesan cheese, for serving

Instructions

  1. Cook the rice noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant.
  3. Add the bell pepper and broccoli, cooking until tender.
  4. Stir in the cherry tomatoes, soy sauce, basil, Italian seasoning, and red pepper flakes.
  5. Add the cooked noodles to the skillet and toss to combine.
  6. Serve hot, topped with freshly grated Parmesan cheese.

Notes

Feel free to substitute vegetables or make it vegan with plant-based Parmesan.
