A charming and simple lunch box filled with delightful goodies perfect for Valentine’s Day.

Ingredients

  • 1 cup quinoa, rinsed
  • 1 ½ cups vegetable broth
  • 1 cup chickpeas, drained and rinsed
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, finely chopped
  • ¼ cup parsley, chopped
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • Small dark chocolate hearts for a sweet treat

Instructions

  1. In a medium-sized pot, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low. Cover and let it simmer for about 15 minutes until the quinoa has absorbed all the liquid and is fluffy.
  2. While the quinoa cooks, chop your cucumber, cherry tomatoes, red onion, and parsley.
  3. In a large bowl, combine the cooked quinoa, chickpeas, diced cucumber, cherry tomatoes, red onion, and parsley. Toss gently until everything is evenly mixed.
  4. In a separate small bowl, whisk together lemon juice, olive oil, salt, and pepper. Drizzle this dressing over your quinoa salad and give it another gentle toss to coat everything beautifully.
  5. Divide the quinoa salad into two compartments of a lunch box, leaving room for the chocolate hearts.
  6. Close the lunch box and pack it with a note or small token of affection.

Notes

These lunch boxes can be stored in the fridge for up to 3 days. Add the dressing just before serving for maximum freshness.
