A delightful cake layered with fresh strawberries and airy whipped cream, perfect for Valentine’s Day celebrations.

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh berries and edible flowers for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add this mix to the creamed mixture, alternating with the buttermilk.
  5. Gently fold in the chopped strawberries.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Allow the cakes to cool in pans for 10 minutes, then turn them out onto wire racks to cool completely.
  9. In a medium bowl, whip the heavy cream with the powdered sugar until soft peaks form.
  10. Once the cakes are cool, spread whipped cream between the layers and on top of the cake.
  11. Decorate with fresh berries and edible flowers.
  12. Serve at your Valentine’s Day gathering.

Notes

For a twist, substitute strawberries with raspberries or blueberries, or add lemon zest for brightness.
