Ingredients

  • 1/2 cup almond flour
  • 1/4 cup all-purpose flour
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine ricotta cheese, almond flour, all-purpose flour, sugar, eggs, vanilla extract, baking powder, and salt. Mix until smooth and creamy.
  3. Drop generous spoonfuls of the batter onto a parchment-lined baking sheet, spacing them out.
  4. Bake in the preheated oven for 15-20 minutes or until edges are lightly golden.
  5. Remove from oven and let cool on the baking sheet for a few minutes.
  6. Dust with powdered sugar before serving.
