A vibrant and creamy pie with festive green swirls and a zesty lime layer, perfect for celebrating St. Patrick’s Day.

  • 1 pre-made pie crust
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • Green food coloring
  • 1 package (3 oz) lime-flavored gelatin
  • 2 cups boiling water

Instructions

  1. Prepare the pie crust according to package instructions and set aside to cool.
  2. In a mixing bowl, beat the cream cheese until smooth and creamy. Gradually add powdered sugar and vanilla extract, mixing until fully combined.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  4. Divide the cream cheese mixture in half. In one half, mix in a few drops of green food coloring until the desired color is achieved.
  5. In another bowl, dissolve the lime-flavored gelatin in boiling water and allow it to cool slightly. Once cooled, mix it into the non-colored cream cheese mixture.
  6. Alternate spoonfuls of both mixtures into the prepared pie crust, using a knife or skewer to swirl them together.
  7. Refrigerate for at least 4 hours or until set. Serve chilled and enjoy!

This pie can be paired with whipped cream or served alongside traditional Irish dishes.
