A healthy and delightful loaf cake bursting with refreshing lemon flavors and the rich creaminess of Greek yogurt.

  • 1 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 3 large eggs
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour or whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the Greek yogurt, honey or maple syrup, eggs, melted coconut oil, and vanilla extract until smooth and creamy.
  3. In another bowl, combine the flour, baking powder, baking soda, salt, lemon zest, and lemon juice. Whisk until well mixed.
  4. Gradually add the dry ingredient mixture to the wet ingredients, mixing gently until just combined. Avoid overmixing; a few lumps are perfectly fine!
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

This loaf cake pairs beautifully with a dollop of Greek yogurt or a light lemon glaze. It can also be toasted and served with almond butter for a nutritious breakfast.
