A simple and healthy crustless quiche packed with protein from eggs and cottage cheese, perfect for breakfast, brunch, or a light dinner.

Ingredients

  • 6 large eggs
  • 1 cup cottage cheese
  • 2 cups fresh spinach, chopped
  • 1/2 cup milk
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup onion, finely chopped
  • Salt and pepper to taste
  • Olive oil or cooking spray for greasing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch pie dish with olive oil or cooking spray.
  2. In a large bowl, whisk together the eggs and milk.
  3. Stir in the cottage cheese, chopped spinach, shredded cheese, and onion.
  4. Season with salt and pepper.
  5. Pour the mixture into the prepared pie dish.
  6. Bake for 30-35 minutes, or until the quiche is set and lightly golden on top.
  7. Let it cool slightly before slicing and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze slices for up to 2 months. Reheat before serving.
