A quick and healthy chicken stir fry packed with vibrant vegetables, ready in just 25 minutes.

Ingredients

  • 1 pound chicken breast, sliced
  • 2 medium zucchinis, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: sesame seeds for garnish

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add sliced chicken breast to the hot skillet. Cook until browned and fully cooked through, about 5-7 minutes.
  3. Stir in the minced garlic, then add the sliced zucchinis and bell pepper.
  4. Continue stir-frying for another 5 minutes until the vegetables are tender but still crisp.
  5. Pour in the soy sauce and stir well. Cook for an additional 2 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with sesame seeds if desired.

Notes

This dish pairs well with jasmine rice or quinoa for a complete meal. For a vegetarian version, replace chicken with firm tofu.
