A delightful and comforting dish combining chicken and lentils, enhanced with spices and cooked easily in an Instant Pot.

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup lentils, rinsed
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 bell pepper, diced
  • 4 cups chicken broth
  • 2 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat the Instant Pot to ‘Sauté’ mode and add olive oil.
  2. Add onion, garlic, carrots, and bell pepper, and sauté until softened.
  3. Add cumin, paprika, salt, and pepper, and stir until fragrant.
  4. Add chicken breast and rinsed lentils.
  5. Pour in chicken broth and stir to combine.
  6. Close the lid and set the Instant Pot to ‘Manual’ mode on high pressure for 15 minutes.
  7. Once done, allow natural pressure release for 10 minutes, then quick release any remaining pressure.
  8. Shred the chicken in the pot and stir before serving.

Notes

Great for meal prep; store leftovers in an airtight container in the fridge for up to 4 days or freeze for 3 months.
