Fluffy pancakes infused with apples and yogurt, perfect for a comforting breakfast or brunch.

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup plain yogurt
  • 1/2 cup milk
  • 1 large egg
  • 1 tablespoon melted butter
  • 1 cup diced apples
  • Butter or oil for cooking

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  2. In another bowl, mix together the yogurt, milk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the diced apples.
  4. Heat a skillet over medium heat and lightly grease it with butter or oil.
  5. Pour a ladleful of batter onto the skillet. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  6. Serve warm, drizzled with maple syrup or honey, and add fresh fruit if desired.

Notes

Don’t overmix the batter for fluffier pancakes. Use a non-stick skillet for easier flipping.
