Hot Honey Beef & Sweet Potato Boats

Delicious sweet potato boats filled with savory beef and topped with creamy cottage cheese and a drizzle of hot honey.

Ingredients

  • 2 small sweet potatoes
  • 1/2 lb ground beef (or turkey)
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika (or chili powder)
  • 2/3 cup cottage cheese
  • 1/2 avocado, sliced
  • 2–3 tsp hot honey (or honey + chili flakes)
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place sweet potatoes on a baking sheet and bake for 40–50 minutes until soft.
  2. While baking, heat a nonstick pan over medium heat. Add ground beef and season with salt and smoked paprika. Cook until browned, about 5–7 minutes.
  3. Once sweet potatoes are done, split each potato down the middle and fluff the insides with a fork. Season with salt and black pepper.
  4. Spoon browned beef generously on top of the fluffed sweet potatoes.
  5. Top each sweet potato boat with a scoop of cottage cheese.
  6. Add avocado slices atop the cottage cheese and drizzle with hot honey.
  7. Optional: Toss cucumber slices with vinegar, salt, oil, pepper, and sesame seeds for a side salad.

Notes

Feel free to substitute cottage cheese with Greek yogurt or sour cream. You can also use different ground meats or tofu for a vegetarian option.
