  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 cups mixed vegetables (such as bell peppers, carrots, and broccoli)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: fresh herbs for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together the honey and Dijon mustard in a small bowl.
  3. Season the chicken breasts generously with salt and pepper.
  4. Toss the mixed vegetables in a large bowl with olive oil, salt, and pepper.
  5. Spread the seasoned vegetables on a baking sheet and lay the glazed chicken on top.
  6. Bake for 25-30 minutes until cooked through.
  7. Serve warm, garnished with fresh herbs if desired.

Notes
