These homemade veggie burgers are nutritious, hearty, and a perfect alternative to traditional meat patties, packed with flavor and creativity.

Ingredients

  • 1 can black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/2 cup corn
  • 1/2 bell pepper, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • Olive oil for frying
  • Burger buns
  • Lettuce, tomato, and condiments for serving

Instructions

  1. Mash the black beans in a large bowl until mostly smooth, leaving some chunks for texture.
  2. Stir in the breadcrumbs, corn, diced bell pepper, chopped onion, minced garlic, cumin, paprika, salt, and pepper until well combined.
  3. Form the mixture into patties, adjusting thickness as desired.
  4. Heat a drizzle of olive oil in a pan over medium heat and cook the patties for about 5 minutes on each side until golden brown.
  5. Serve the cooked patties on burger buns topped with lettuce, fresh tomato, and condiments.

Notes

Perfect for meal prep and a great option for summer barbecues. Freeze uncooked patties to use later.
