A comforting soup made with Italian sausage, cheese tortellini, and fresh spinach that brings warmth and joy to any meal.

  • 1 pound Italian sausage
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 9 ounces cheese tortellini
  • 4 cups fresh spinach
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • Parmesan cheese for serving

Instructions

  1. Cook the Italian sausage over medium heat until browned. Remove and set aside.
  2. Add the chopped onion and minced garlic to the pot and sauté until the onion turns translucent, about 3-4 minutes.
  3. Stir in the chicken broth and canned diced tomatoes. Bring to a boil.
  4. Stir in the cheese tortellini and cook according to package instructions until tender, about 7-10 minutes.
  5. Add the cooked sausage back to the pot along with the fresh spinach. Cook until the spinach wilts, about 2-3 minutes.
  6. Season your soup with salt, pepper, and Italian seasoning. Adjust seasonings as needed.
  7. Serve hot in bowls, topped with Parmesan cheese.

Notes

Try adding kale instead of spinach or customize by incorporating other vegetables like carrots or zucchini.
