Homemade Reuben Bake

A comforting and delicious twist on the classic Reuben sandwich, layered and baked to perfection.

Ingredients

  • 1 loaf of rye or pumpernickel bread
  • 1 pound corned beef, sliced
  • 8 ounces Swiss cheese, shredded
  • 1 cup sauerkraut, drained
  • 1 cup Russian dressing
  • 1 tablespoon butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking dish with melted butter.
  3. Layer half of the bread slices at the bottom of the greased baking dish.
  4. Spread half of the sliced corned beef over the layered bread.
  5. Sprinkle half of the Swiss cheese, followed by half of the drained sauerkraut, then drizzle half of the Russian dressing over that.
  6. Repeat the layering process with the remaining ingredients, finishing with a layer of cheese on top.
  7. Brush the top with the melted butter.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Let cool slightly before serving.

Notes

Ensure sauerkraut is well-drained to avoid sogginess. For a vegetarian option, substitute corned beef with tempeh or mushrooms.
