Delightful homemade peppermint patties that combine refreshing mint with rich chocolate for a perfect treat.

Ingredients

  • 1 cup powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons corn syrup
  • 1/8 teaspoon salt
  • 1/2 teaspoon peppermint extract
  • 2 cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil (optional, for dipping)

Instructions

  1. In a medium mixing bowl, combine the powdered sugar and unsweetened cocoa powder. Mix well using a whisk to break up clumps.
  2. Add the corn syrup, salt, and peppermint extract. Stir until it forms a dough-like consistency.
  3. Dust your work surface with powdered sugar and knead the dough gently for a minute until smooth.
  4. Divide the dough into small portions, roll into balls, and flatten into discs, about 1/4 inch thick.
  5. Place the discs on a baking sheet lined with parchment paper and freeze for about 30 minutes.
  6. While the discs chill, melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between. Stir in coconut oil when nearly melted.
  7. Dip each chilled patty into the melted chocolate and use a fork to remove, allowing excess chocolate to drip off.
  8. Place coated patties back on the baking sheet. Optionally, sprinkle crushed peppermint on top.
  9. Refrigerate for 20-30 minutes until the chocolate hardens.
  10. Enjoy your homemade peppermint patties and store leftovers in an airtight container in the refrigerator.
