A comforting dish of creamy lentils, perfect for warm family dinners or special occasions.

Ingredients

  • 1 cup lentils (green or brown)
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. Sauté the onion, garlic, carrots, and celery in a splash of vegetable broth until softened.
  3. Stir in the cumin and smoked paprika, cooking for another minute.
  4. Add the lentils, remaining vegetable broth, and coconut milk to the pot.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes, or until lentils are tender.
  6. Season with salt and pepper to taste.
  7. Serve warm, garnished with fresh parsley.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Can be frozen for up to three months.
