Delightful and fluffy cinnamon muffins, perfect for breakfast or a snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mix together the flour, sugar, baking powder, ground cinnamon, and salt in a large bowl.
  3. Whisk together the egg, milk, vegetable oil, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool before serving.

Notes

These muffins can be customized with nuts, chocolate chips, or dried fruits.
