A heartwarming bowl of soup filled with tender chicken, colorful vegetables, and cheesy tortellini, perfect for chilly evenings.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package (9 oz) cheese tortellini
  • 2 cups spinach, chopped
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Parmesan cheese, for serving (optional)

Instructions

  1. Heat the olive oil over medium heat in a large pot. Add the onion and garlic, and sauté until the onion becomes translucent.
  2. Add the carrots and celery, and cook for another 5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the cooked chicken, tortellini, oregano, salt, and pepper.
  5. Cook for about 5-7 minutes or until the tortellini is cooked al dente.
  6. Add the spinach and cook until wilted, about 2 minutes.
  7. Serve hot with grated Parmesan cheese if desired.

Notes

For extra flavor, use homemade chicken broth. You can customize with different vegetables or proteins according to preference.
