Homemade Beefy Melt Burritos

Delicious burritos filled with seasoned ground beef, creamy cheeses, fluffy rice, and juicy tomatoes, wrapped in warm tortillas.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 1 ounce)
  • 1 cup water
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped (optional)
  • Salt and pepper to taste
  • Cooking oil (for sautéing)

Instructions

  1. Heat a large skillet over medium heat and add a drizzle of cooking oil.
  2. Once the oil is hot, add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high, add ground beef, cook until browned, about 5-7 minutes. Season with salt and pepper.
  4. Drain excess fat, add taco seasoning and water, stir, and simmer for 5 minutes until thickened.
  5. In a large bowl, combine cooked rice, diced tomatoes, and half of the cheeses. Mix in the taco meat mixture until combined.
  6. Lay out a tortilla, spoon about 1/3 cup beefy filling in the center, top with sour cream and cilantro if desired.
  7. Fold sides of the tortilla inwards, then roll tightly from the bottom.
  8. Preheat a skillet or griddle over medium heat, place burritos seam-side down, and cook for 2-3 minutes on each side until golden brown.
  9. Remove burritos, sprinkle remaining cheese on top, cover skillet briefly to melt cheese if desired.
  10. Serve warm with extra sour cream, salsa, or guacamole.

Notes

For added kick, incorporate jalapeños or hot sauce. Customize with your favorite veggies like spinach or bell peppers. Store leftovers in the fridge for up to 3 days.
