Delicious and crispy zucchini fritters packed with protein, perfect for snacks or meals.

Ingredients

  • 2 medium zucchini, grated
  • 1/2 cup chickpea flour
  • 1/2 cup shredded cheese (e.g., feta or cheddar)
  • 1/4 cup green onions, chopped
  • 2 large eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Place grated zucchini in a clean cloth and squeeze out excess moisture.
  2. In a large bowl, combine the drained zucchini, chickpea flour, cheese, green onions, eggs, garlic powder, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Scoop out spoonfuls of the mixture and flatten slightly in the hot skillet.
  5. Cook for 3-4 minutes on each side or until golden brown.
  6. Remove from the skillet and let drain on paper towels.
  7. Serve warm and enjoy!

Notes

For added flavor, you can introduce red pepper flakes or fresh herbs. Leftovers can be stored in an airtight container for up to 3 days.
