A quick and nutritious twist on the classic brownie, packed with protein and chocolatey goodness.

Ingredients

  • 1/4 cup cottage cheese
  • 1/4 cup cocoa powder
  • 1/4 cup almond flour
  • 2 tablespoons sweetener of choice
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chocolate chips (optional)
  • Pinch of salt

Instructions

  1. Blend the cottage cheese in a microwave-safe mug until smooth.
  2. Add cocoa powder, almond flour, sweetener, baking powder, vanilla extract, and a pinch of salt to the blended cottage cheese and mix thoroughly.
  3. Stir in chocolate chips if using.
  4. Microwave on high for about 1-2 minutes until set.
  5. Allow to cool slightly before enjoying your ultra-fudgy brownie.

Notes

For a lower-carb version, swap out the sweetener for stevia or erythritol. Ensure the cottage cheese is blended until smooth for best results.
