Light, airy pancakes with a protein boost, perfect for a nostalgic breakfast or brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons protein powder
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (or milk substitute)
  • 1 large egg
  • 2 tablespoons melted butter (or coconut oil)
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk the dry ingredients in a large bowl until well combined.
  2. Mix the wet ingredients in another bowl until smooth.
  3. Combine the wet and dry ingredients gently.
  4. Preheat a non-stick skillet over medium heat and grease lightly.
  5. Pour 1/4 cup of the batter per pancake onto the skillet.
  6. Cook until bubbles form, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.

Notes
