A delicious high-protein meal combining tender chicken and creamy potatoes with garlic and cheese, perfect for a comforting one-dish dinner.

  • 4 boneless, skinless chicken breasts
  • 2 cups potatoes, diced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Season chicken breasts with salt and pepper, then add to the skillet, cooking until browned on both sides.
  4. In a baking dish, combine diced potatoes and heavy cream. Place the chicken on top of the potatoes.
  5. Pour any remaining garlic oil from the skillet over the chicken and potatoes.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Cover with aluminum foil and bake for 25-30 minutes or until the chicken is cooked through and the potatoes are tender.
  8. Remove the foil for the last 10 minutes to allow the cheese to melt and brown.
  9. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze in a safe container and consume within a month. Experiment with different cheeses and vegetables for added flavor.
