  • 1 lb steak (sirloin or flank)
  • 2 large potatoes
  • 1 cup Greek yogurt
  • 2 tablespoons chipotle sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Chopped cilantro for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop the potatoes into bite-sized cubes. Toss them with olive oil, garlic powder, onion powder, salt, and pepper, then spread on a baking sheet to roast for 25-30 minutes.
  3. Season the steak generously with salt and pepper.
  4. Heat a skillet over medium-high heat and sear the steak for 4-6 minutes on each side. Let it rest before slicing.
  5. Mix the Greek yogurt and chipotle sauce in a bowl to create the sauce.
  6. Assemble the meal prep by layering roasted potatoes, sliced steak, and drizzling with the chipotle sauce, garnished with chopped cilantro.

Notes

Store in the refrigerator for up to four days, with the option to freeze for longer storage. Customize the potatoes with additional spices for extra flavor.
