A delightful chocolate loaf cake with a hidden surprise of fruity jam at its core that brings joy to any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup water
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract
  • 1 cup of strawberry or raspberry jam (for filling)
  • Chocolate frosting (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the vegetable oil, water, vinegar, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Pour half of the batter into the greased loaf pan.
  6. Create a well in the center of the batter and fill it with jam.
  7. Cover the jam with the remaining batter and bake for 40-45 minutes.
  8. Cool the cake in the pan, then transfer to a wire rack and frost with chocolate frosting.

Notes

Store the cake in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
