Ingredients

Scale
  • 1 lb ground turkey
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 egg
  • 1/2 cup Greek yogurt
  • 1/2 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). In a large bowl, combine the ground turkey, breadcrumbs, grated Parmesan, fresh parsley, fresh mint, minced garlic, oregano, salt, black pepper, and the egg. Mix until well combined.
  2. Scoop out portions of the mixture and, using your hands, form them into meatballs. Place the formed meatballs on a baking sheet lined with parchment paper.
  3. Bake for 20-25 minutes, or until the meatballs are cooked through and golden brown.
  4. Mix together the Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and pepper in a bowl until well blended.
  5. Serve the meatballs warm, accompanied by the cool tzatziki on the side.

Notes

Leftover meatballs can be stored in an airtight container in the refrigerator for up to 3 days or frozen for about 2 months.
