A delightful tart featuring a buttery shortbread crust filled with sweet and tart plums.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups plums, pitted and sliced
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and grease the tart pan.
  2. Cream together softened butter and powdered sugar in a mixing bowl until light and fluffy.
  3. Add flour and salt, mixing until just combined.
  4. Press the buttery dough into the bottom and sides of the greased tart pan.
  5. In another bowl, toss sliced plums with granulated sugar, cornstarch, vanilla extract, and lemon juice.
  6. Pour the plum mixture over the prepared crust.
  7. Bake for 40-45 minutes or until plums are tender and crust is golden brown.
  8. Let cool before serving.

Notes

Serve with whipped cream or ice cream. Leftovers can be stored in an airtight container for up to 3 days.
