A warm, creamy soup featuring chicken, broccoli, and cheddar cheese, perfect for cozy days.

Ingredients

  • 1 pound chicken breast, diced
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme

Instructions

  1. Sauté the chicken in olive oil over medium heat until browned.
  2. Add the chopped onion and minced garlic; sauté until the onion is translucent.
  3. Pour in the chicken broth and bring to a simmer; add the broccoli and thyme and cook until tender.
  4. Stir in the milk and cheddar cheese until melted and creamy.
