A wholesome and easy-to-make dish featuring tender chicken, vibrant veggies, and fluffy rice, all coated in a delicious sticky glaze.

Ingredients

  • 1 lb chicken breast, diced
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 cups cooked rice
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 1 red bell pepper, sliced
  • Sesame seeds for garnish
  • Green onions for garnish

Instructions

  1. In a bowl, mix the soy sauce, honey, sesame oil, garlic, and grated ginger to create the marinade.
  2. Add the diced chicken to the marinade and let it sit for at least 30 minutes, allowing those flavors to soak in.
  3. Heat a skillet over medium heat and cook the marinated chicken until fully cooked, about 7-10 minutes.
  4. In another pot, steam the broccoli, carrots, and bell pepper until tender, about 5-7 minutes.
  5. Serve the cooked chicken over a bed of warm rice and top it generously with the steamed vegetables.
  6. Sprinkle with sesame seeds and sliced green onions before serving.

Notes

For deeper flavor, marinate the chicken overnight. You can substitute veggies based on what’s available. Use olive oil instead of sesame oil if needed.
